The South Australian Shellfish Quality Assurance Program (SASQAP) was developed in 1994 as a joint initiative between Primary Industries and Resources SA (PIRSA) and the shellfish aquaculture industries, to provide consumer protection and ensure development with access to domestic and overseas markets. To ensure farmed shellfish meets all relevant food safety standards and thus allow the development of a sustainable shellfish industry across the state it is necessary for SASQAP to have adequate monitoring and management controls for all shellfish growing areas. The SASQAP Policy Report provides an overview of the issues associated with the harvest of safe bivalve molluscan shellfish for human consumption and makes recommendations relevant to achieve best practice management of shellfish aquaculture in South Australia. The paper outlines practices that are designed to ensure that bivalve molluscs harvested from South Australian waters meet the strictest national and international guidelines in regard to food safety and in so doing determines appropriate policies, procedures and practices so the industry can develop in an ecologically sustainable manner.
