The paddlefish, Polyodon spathula, is one of the largest freshwater fish in the United States. Unlike most fishes the paddlefish is a filter feeder most of its life; it removes zooplankton from the water as its main food source. In 1992, paddlefish were added to the Appendix II list of the United Nations Convention on International Trade of Endangered Species of Wild Fauna and Flora (CITES). Therefore, the growing demand for caviar and other paddlefish products will have to be met through commercial paddlefish production.
