Oysters have been cultivated in one form or another for more than 2,000 years. In recent years the total U.S. harvest of oysters has been 30 million pounds of meats; about 75 percent of the total is the eastern oyster. About 18 million pounds of total oyster production (all species) is by cultivation. This document provides an introduction to oyster cultivation methods and requirements.
